The first completely handmade sparkling wine from Umbria. Golden Trebbiano 2019 naturally refermented in November 2020. Disgorged by hand and not dosed (without the addition of sugars or various substances). Currently on the market the foul-mouthed lot 21/11/2022 with a 24-month stay on the lees. Great triumph of technique in symbiosis with an extraordinary territory.
GRAPES: Golden Trebbiano 100%
PRUNING: upside down and spurred cordon
HARVEST: 2019 Early, first ten days of September, manual in crates with selection of the grapes.
VINIFICATION: Destemming and crushing. About three days of maceration on the skins. Soft squeeze. Fermentation 80% in steel and 20% in barriques.
REFINING BASIC WINE: one year in steel, frequent bâtonnage.
BOTTLE REFINEMENT: bottled in November 2020, spontaneous refermentation in the bottle. 6 atmospheres of pressure. Aging 24 months on the lees.
DEGORGEMENT: manual in batches of 240 bottles in order to prolong the permanence on its lees.
PAS DOSE' means not dosed, that is when we go to disgorge to eliminate the yeast from inside the bottle we fill up with the same sparkling wine without adding sugar or liqueurs or other substances. In this phase the crown cap is also replaced with the typical cork mushroom cap, the cage, capsule and label are placed, all strictly by hand.
BOTTLES: 2581 numbered bottles.
COLOUR: straw yellow, fine and persistent bubbles.
BOUQUET: bread crust, flowers, hay and aromatic herbs.
TASTE: fine bubbles, fresh, fruity, harmonious.
